Sprouts dahi bhalla is best enjoyed fresh. However, if you’re short on time, you can prepare it in advance. Instead of soaking the sprouts bhallas in the yogurt mixture, steam them and store them in an airtight container in the fridge, where they’ll keep for up to two days. Mix the yogurt ingredients separately and refrigerate to prevent souring. When ready to serve, heat the sprouts bhallas in the microwave for two minutes, then assemble the dish. This way, you’ll enjoy the flavours as if they were freshly made.

How To Make Sprouts Dahi Bhalla At Home | Sprouts Dahi Bhalla Recipe

Making sprouts dahi bhalla at home is a breeze. This recipe, shared by digital creator @rishita.thalluri on Instagram, is simple and straightforward. Start by blending two cups of mixed sprouts coarsely in a mixer grinder. Transfer the coarse paste to a bowl and mix in one cup of yogurt and one cup of sooji. Combine thoroughly and let it rest for 30 minutes. After resting, gently fold in one sachet of fruit salt. Grease a steamer tray and form small balls from the sprouts mixture, placing them on the tray without overcrowding. Steam for 15 minutes or until soft. Meanwhile, whisk two cups of yogurt, adding salt and sugar or stevia to taste. Once steamed, immerse the bhallas in the yogurt and refrigerate for 30 minutes. Before serving, garnish with roasted cumin powder, red chilli powder, spicy coriander chutney, and tangy tamarind chutney.

But beyond the beauty lies a newfound focus on sustainable practices, making it a haven for eco-conscious tourists and a leader in responsible tourism. My recent trip to Sri Lanka unveiled a country where delicious food goes hand-in-hand with environmental responsibility.

From Food Safety to Food Sovereignty
The island’s journey towards sustainable gastronomy began with a commitment to food safety. Collaborations with organizations like UNIDO and NORAD play a crucial role in establishing international food safety standards. This not only bolstered public health but also paved the way for a thriving food industry.  

Sri Lanka’s vision extends beyond mere safety. The concept of “food sovereignty” – the right to healthy, culturally appropriate food produced sustainably – is taking root. This empowers local communities and ensures a future where food security and tradition go hand-in-hand, ensuring the well-being of both locals and tourists alike.

My first encounter with the country’s commendable sustainability endeavours was in SriLankan Airlines – on my way to Sri Lanka. Richard Nuttall, the CEO of Sri Lankan Airlines said, “SriLankan Airlines prioritizes reducing its carbon footprint with industry-leading practices in fuel efficiency, carbon emission monitoring, and landfill waste reduction through our ‘Mathaka’ upcycling project. Additionally, the airline actively participates in the restoration and preservation of Sri Lanka’s mangrove forests and the conservation of seagrass habitats across the island.”

Cinnamon Hotels: Pioneering Sustainable Practices
My exploration of sustainable food systems led me to Cinnamon Hotels, a renowned Sri Lankan hospitality chain. Their commitment to ethical and eco-friendly practices is truly inspiring.
One captivating initiative is their partnership with NORDAQ. Cinnamon Bentota Beach has become the first Sri Lankan resort to eliminate plastic water bottles. In their place? Reusable glass bottles paired with in-house filtration technology. This not only reduces plastic waste but also ensures guests have access to clean, mineral-rich water. During my stay, I had only glass bottles in my room in all Cinnamon hotels. This just reminds my travel to Sri Lanka in Sri Lankan Airlines, which has introduced new eco-friendly pillow covers and headrest covers (antimacassars) made from recycled PET plastic (rPET)!

Another inspiring program is the Good Agriculture Practices (GAP) Initiative. This project empowers small-scale farmers by providing them with knowledge and resources for sustainable farming methods. It’s a win-win situation: farmers gain economic prosperity, and the hospitality industry benefits from fresh, locally sourced produce.

Protecting Ecosystems
Sustainability at Cinnamon Hotels goes beyond the plate. Their “Bees that Sustain Lives” project is a beekeeping initiative that empowers local communities while fostering healthy bee populations. This not only promotes biodiversity but also provides a source of income for beneficiaries through a buy-back program for honey and beeswax.

Witnessing firsthand Cinnamon Nature Trails’, I realized how nature, animals and humans co-exist in harmony in the village. The nature trail took us through the interior of the village, a short boat ride to a watch house where we were greeted with coconut water, which we had to drink directly, not in a glass or with a plastic straw! Yes, that’s true!

This innovative space utilizes vertical gardens and organic farming practices to cultivate a diverse range of fruits, vegetables, and herbs, including chillies, passion fruit, corn, vanilla, pomegranate and dragon fruit.

One fascinating part was a separate temperature-controlled section dedicated to growing lettuce, which is otherwise difficult to grow in the region’s soil and temperature. Lettuce is actually grown in the mountains but here it was growing and thriving in the plains. And when I tried the lettuce from the garden in the breakfast next morning at Cinnamon Lodge Habarana Restaurant, I was impressed with the fresh taste of the greens in my salad.
The organic garden also makes its own compost from waste to add back to the soil to grow more plants. Not just that, they also provide compost from the organic garden to nearby farmers to help them grow crops.

5 Tips To Make Perfect Gobhi Manchurian At Home

Truth be told, I am a big fan of Desi Chinese. I mean, what’s not to like? International flavours altered to please our palate? Yes, please! A couple of days back, I was enjoying the rain at home while craving some desi Chinese. But when I checked the fridge, I only had a cauliflower and a few extra veggies. Immediately, I decided to whip up a hot bowl of Gobhi Manchurian. But if you are also a fan of cooking, you know how tricky it can get to achieve a perfect balance of taste and flavours when you make desi Chinese at home. But worry not, after practising a few times, I have come up with a perfect guide to help you make restaurant-style Gobhi Manchurian at home. Intrigued? Here Are 5 Tips To Make Perfect Gobhi Manchurian At Home

1. Don’t Go For A Dull Cauliflower

First off, the star of our dish – the cauliflower! While selecting your gobhi, make sure to choose the one that is firm and fresh. Look for a cauliflower that has big and firm florets with no dark spots. This will ensure that you have big and juicy Manchurian contents that have a great texture and taste. Fresh cauliflower not only cooks better but also absorbs the flavours beautifully. Moreover, soak the cauliflower florets for 10 minutes in salt water before you start cooking. This will remove the unwanted impurities from the florets.

2. Make A Flavourful Batter

Half of the taste of your gobhi Manchurian depends on how to make the coating batter. In a bowl, mix all-purpose flour (maida) and corn flour to give your gobhi a tasty, crispy coating. In the batter, add ginger-garlic paste, salt, pepper and a pinch of baking soda to make it extra crunchy. Also, make sure the batter isn’t too thick or thin so that it sticks to the florets well. More like, pakora batter consistency. Getting the batter right is important because it is the very first layer of flavour that your cauliflower will get.

3. Don’t Fry Once But Twice

Yes, you read that right! Double frying is the secret to getting that perfect crunch. First, fry the coated cauliflower florets in hot oil until they are lightly golden. Then, remove them on a paper towel to drain excess oil. This first fry cooks the cauliflower through without overcooking the batter. While frying it the second time, keep the heat on high and fry the coated florets for a shorter time. This will ensure that the coated cauliflower remains crispy even after soaking up the Manchurian sauce. While double frying might seem like extra work, trust me, it will be worth it.

4. Prepare A Balanced Gravy 

The gravy is what makes this dish a perfect 10. To make this, prepare a mixture of soy sauce, ketchup, red chilli sauce, green chilli sauce, and vinegar for that perfect sauce with all the flavours. Then in a pan, heat some oil and add finely chopped ginger, garlic, spring onions and green chillies. Saute for a few minutes before adding the gravy to it. Keep sauteing on a low flame so that the veggies absorb the flavours. At this point, taste the sauce and adjust the spices accordingly. Once you are satisfied with the taste, add a slurry of corn flour and water to thicken it.

5. Add Cauliflower Quickly

Once you have prepared the sauce, don’t wait for it to cool down. Instead, toss the fried cauliflower in the prepared sauce just before serving it. This would ensure that the cauliflower remains crispy and doesn’t turn soggy on absorbing the gravy. Use a wide pan to toss the coated cauliflower evenly and quickly. When you add the cauliflower florets quickly, it ensures that the dish remains piping hot and ready to dig. Garnish with some sesame seeds and enjoy!
